Fajitas


Take one fresh pork shoulder, 3-4 limes, spices (seasoned salt, Adobo, ground cumin, chili powder, black pepper) and one medium aluminum roasting pan. Take your roasting pan, and with some aluminum foil make a temporary rack by twisting some foil into a makeshift rack. Sit your pork shoulder roast on top of the foil twist rack.

Zest your limes. Squeeze your limes all over the pork shoulder, add spices, and rub into it. Then, add your zest pat onto your pork shoulder. Take foil, cover your roast completely in the roasting pan and slow cook at 325 degrees for about 3 to 3.5 hours. Cook until the bone will pull away freely. Take off top foil and cook for another 30 minutes to brown the top. Take out and let stand 30 minutes. Pull and serve on corn or flower tortilla’s and add your favorite toppings.
