I always loved Mexican food. Growing up in Chicago I got spoiled to some really great authentic Mexican food. Some would argue that Chicago makes their portions too big. And they do. But I’ve been to Mexico dozens of times and had just about every dish there is, from fine restaurants and street vendors. And there’s no mistaking that original Mexican flavor, and yes, it reminds me exactly of the Mexican restaurants in Chicago.

For example, let’s look at a simple taco. If you walk into any Mexican restaurant in Chicago or Mexico and ask for a taco, this is what you’ll get…

Skirt steak, chopped into tiny pieces, cooked on a flat grill. Served on two corn tortillas. I don’t know why they always double up on the tortillas but for some reason (probably because they break) you always get one taco on two tortillas. Top that off with some diced onions and cilantro. That’s it. Well, you could top it off with some red or green salsa, but that’s all there is to it. Oh yeah, and don’t forget a slice of lime. Just squeeze that lime juice on your taco and you’ll have an authentic Mexican taco.
